Welcome to the second installment of "The WASAKE Selection." Today, we are exploring a brewery located just a 10-minute walk from our studio. Founded in 2020 in the historic Komagata area, Konohana Brewery is a pioneer of the "craft sake" movement in Tokyo.
Our Owner and Sommelier, Hide, has curated two exceptional bottles that represent the innovative spirit of our neighborhood.
1. The Legend of the Lantern: "Daiginjo Method"
The first thing that captures the eye is the striking label of the Daiginjo Method. It isn't just a pattern; it is a tribute to the most iconic landmark in our district: the Kaminarimon (Thunder Gate).
- The Design: Look closely at the bottom of the giant red lantern at Senso-ji Temple, and you will find a magnificent dragon carving. This hidden protector of Asakusa is the very motif of this label.
- The Craft: Brewed with the sophisticated "Daiginjo" technique—slow fermentation at low temperatures—this bottle offers a refined, floral, and fruity profile that matches its elegant design.

2. The Raw Power of Rice: "Hanagumori"
In contrast to the delicate Daiginjo Method, Hanagumori is the brewery's flagship "cloudy" (nigori) sake that celebrates the unfiltered energy of rice.
